Natalie Trent was born in Denver, raised in Seattle, she has lived abroad for over half her life. Natalie dreamed of living in France and of running a Chambre/Table d'hôte for many years. Having spent a few years in France she found the perfect guesthouse, where she is able to share with you her life & cuisine in Azille.

She is an internationally-trained personal chef, with extensive knowledge and skills in the cuisines of Italy, South America, Mexico, Asia and France just to name a few. Since living abroad, she has studied and experienced many international cuisines and learned various cooking techniques that have been shared and enjoyed with family and friends throughout the years, wherever she has lived.

She offers the best in local regional cooking, using the freshest of ingredients from Minervois open-air markets and local growers all over the Aude. In addition, she offers a varied international menu to those who are interested in sharing exotic ingredients and spices, and she particularly enjoys preparing dishes with complex flavors, often involving the use of hot peppers and spices from around the world.

She is passionate about food and all its complexities and enjoys very much sharing her life’s adventures and has created a warmth in her home so that you may enjoy the beauty of the South of France at La Dolce Vita.

Natalie welcomed her most important joy into the world December 7, 2005 - Laiyla Cheyenne. Laiyla will be joining Natalie in welcoming you to Azille and the comforts discovered here.
